Macadamia Cream (vegan or vegetarian)

Spectacular, healthy and full of nutrients

Ingredients:


2 tablespoons of vegan or regular butter

1 tablespoon of oil (avocado or any other oil but not

olive oil)

1/4 cup chopped onion

1/4 cup of chopped leek

2 cloves of garlic

1/2 cup of chopped celery

1 1/2 cups of macadamias

1/3 cup of dry white wine

4 cups of vegetable broth

1 handful of parsley

Salt and pepper

Vegan or regular whole cream (to garnish)

Toasted and chopped macadamias (to garnish)

Croutons (optional)



Instructions:


If your macadamias are whole or a combination of whole and halves, use a knife to 'chop' them into rough pieces.

Heat your electric oven or normal oven to 350 o F, place them on a tray in the oven and roast them until they turn golden brown (approximately 20 minutes)

You have to be very careful with this process. We don't want the nuts to brown too much.

Once roasted, take them out of the oven and let them cool down.


In a saucepan, melt the vegan (or regular) butter together with the oil. This is to prevent the butter from burning.

Add the onion and cook for about 2 minutes. Then add the leek, the celery and continue frying the mixture for about 6 to 7 more minutes, adding a little salt in this part of the process so that the ingredients open up and take a better flavor.

Add the macadamias and let them fry for a couple of minutes (3 to 5 minutes)

Add the garlic and cook for another minute.

Now add the white wine until the alcohol evaporates (approximately 1 minute) and then 3 cups of the vegetable broth and the handful of parsley.

Let it boil for at least 12 minutes over low heat. We want the macadamias to soften a little.

Add salt and pepper to taste.

Let it continue boiling for about 5 or 6 more minutes.

Remove the pot from the heat and let the mixture cool a little

Blend the mixture in a blender or food processor until the macadamias are completely ground. If it is very creamy, add the cup of vegetable broth that you saved and if it requires a little more liquid, you can add a little more being careful not to make it too liquid.


Pass the soup through a strainer and once strained, return it to the pot and let it boil a little more, adjusting the salt and pepper again here.


Serve the soup with the cream and the roasted and chopped macadamias and croutons if you like.
